I’ve been dying to make some carbonara, but my breastfeeding wife wouldn’t eat it due to the egg yolks that go in it. So, when I saw this recipe for cacio e pepe (which I believe translates to cheese and pepper), I had to try it.

The other day, I ground up some chicken breasts and formed them into patties. I was going to make chicken burgers or maybe patty melts with them, but I felt like they really needed to be on a biscuit. And so, chicken patties with bacon and blue cheese on a biscuit. Yum.
Last Saturday, we were having some people over to have lunch with us on our roof deck. I wanted to do something a little different than the usual summer cookout, but because there’s no real tables to eat at on our roof (just living room-ish outdoor furniture), the food had to be relatively finger friendly. So, I decided I would turn kalbi into tacos.
I wanted to make a non-Doritos based version of walking tacos. And after much internal debate over what kind of chips to use, I ultimately decided I would make my own. But, it’s friggin hot around here, so there was no way I was going to get a deep fryer going in my ventless kitchen in my non-central air apartment. So, baked tortilla chips.
A meal inspired by our trip to San Diego, this was supposed to be grilled shrimp tacos. But, I forgot to buy tortillas, which turned out to be a very happy accident.
